Entry level DSLR
i use a nikon D90, which, whilst not exactly entry level offers lots to progress with and great picture quality and function control.
If you can pick up a second hand body, and then the new 25-300 lens, you will be set for pretty much everything!

Very happy with the Canon 400D as my learning experience now that level is the 1000D I now have a 550D and I'm doing everything that you say you want to do.
A good piece of advice given to me was get a good basic body and buy extra good quality lenses.
DON'T go cheap on the lenses. Also compose your shots photoshopping can only cover so much in bad technique. FUg it just go have fun , no film cost to your learning curve.
Bought a nikon 3100 as a chrissie present for myself and girlfriend. Did not have a big budget, so I was after a decent body coupled with a decent twin lens kit. Narrowed it down to the Canon 500 and nikon 3100. Both specs were very similar, but the nikon won out because it came with a 55-300mm lens.
Just bought a Nikon D5000,jpeg's straight out of the camera are a bit ordinary, but the RAWs are brilliant when converted to jpeg in NX2.
Nikon has just released the D7000 & discontinued the D5000 so there should be a few cheapies around.Picked up mine for $599 with a 18-55mm VR lens ex floor display from Officeworks of all places.
Canon 550D, with the tokina 11-16mm and the Sigma 70-300mm with a kit lens for everyday use. You are looking at $1600. I used my 550D on sunday and came up with this-
550D with the 75-300mm for longshots and the 18-135 for all day general walk around..
cost about $1000 all up with current prices and deals available.
